Eating & Dancing Salsa are Two of my Favorite Things!

It’s in my blood! 🌶💃 My mother was Mexican, and from her I inherited a deep love for flavorful food and spicy Latin music… though I still draw the line at tongue—yuck! 😄
She taught me how to season hamburger meat for the best tacos and chili con carne. By the time I was 12, Friday night dinners were my night to cook, and chili quickly became our family’s weekly tradition.
What made it extra special was the music. Our house had an intercom system that piped my mom’s favorite 1960s Latin tunes straight into the kitchen. We would move to the rhythm while chopping, stirring, and tasting—turning cooking into a little dance party. Those nights are some of my happiest memories with her.
August marked 55 years since my mother’s passing. And while her absence left a deep wound, her life gave me gifts I still carry: a love of food, music, and making everyday moments joyful. Honoring her means celebrating those gifts—and sharing them with others.
Food and music carry energy, just like we do. 🌿🎶 Creating and sharing this salsa recipe, along with the music that makes me move, is one way I honor my mom’s life and transform the pain of her loss into joy and connection. Her passing was the catalyst for the healing work I do today—helping others release pain, reclaim joy, and reconnect with their true selves.

INGREDIENTS:
5 Tomatoes on the vine
1 White medium onion
6 Garlic cloves
2 Jalapeno peppers
2 Serrano peppers
1 Anaheim pepper (Optional)
1 Handful of Cilantro
2 - 3 Fresh lemons for juice
1 Teaspoon Salt
1/2 Teaspoon Cumin
INSTRUCTIONS:
Set the oven on Broil - High.
Rinse the tomatoes and peppers. Quarter the tomatoes and chop the onions and place them in a rectangular cooking dish. Spray the garlic and peppers lightly with olive or avocado oil and place them into the same dish.
Place them into the oven/broiler and cook the peppers on each side for 6 - 7 minutes until the skins are browned and starting to peel.
Take the ingredients out of the oven and let them cool while you squeeze the lemon, rinse and prepare the cilantro and measure the spices.
Once cool, peel the skins off the peppers, remove seeds for a milder salsa or leave some in if you like more kick.
Chop the garlic and then add the garlic, onions, lemon juice and peppers into the bottom of the Vitamix (or blender of your choice) before the rest of the ingredients. Add half the tomatoes and blend on low, pulsing the mixture a couple of times.
Add the rest of the tomatoes, spices and cilantro to the mixture and mix again on low, pulsating until the ingredients are blended without being too smooth.
Pour some salsa into a bowl to taste test. Add more salt, cumin or cilantro to taste.
